A Legacy in Forty Layers

Mr Güllüoğlu comes from a family that has been making baklava in Istanbul for almost two hundred years.

As a fifth-generation baklava maker in Karaköy, his work reflects how tradition is maintained through discipline, sourcing, and apprenticeship rather than nostalgia. He took a few minutes out of his busy schedule to help us understand what it means to protect a legacy in a city that is constantly changing.

He speaks about starting as a child apprentice, about working with local producers, and about seeing his team as an extension of the same family tradition. In this interview we get to see the true value of something so small but precious, as a piece of Baklava.
